TurduckenOINK...a grilling recipe with some turkey, some duck, some chicken, some bacon, some onions, and some squash…and some GOOD!

 

Prep Time: Plan on 30 minutes getting this ready for the grill

Cooking Time on the Grill: 1 hour and 30 minutes or until internal temp reads 170 to 175 degrees for at least 10 minutes

Experience Level needed to pull off WOW Factor: Maybe a little more experience than a beginner…it looks harder to do than it really is.

How many people can you serve: This recipe will easily serve 6 to 8 people And can be premade and frozen to cook at camp.

 

Ingredients:

One Wild Turkey Breast

One or two duck breasts

6 boneless chicken thighs…quail works just as well

Bacon…one package of thick sliced bacon

Symphony of Seasonings Grilling Rub from Sweet Life Sauce Company

Sweet Life BBQ Sauce from Sweet Life Sauce Company

One large Sweet Onion…chunked into 1 inch pieces

One Buttercup Squash…peeled and chunked into 1 inch pieces

 

 

Directions:

Take the turkey breast and pound it out flat using a meat mallet.

 

Work it until it is about 12 inches round or so…1/2 to ¾ inch thick

 

Do the same thing to the duck breasts and chicken thighs…flatten them until they are about ½ inch or less in thickness.

 

Sprinkle Symphony of Seasonings Grilling Rub liberally on the flattened turkey breast.

 

Lay the duck breast on top of the turkey then the chicken thighs on top of the duck.

 

Place the chunked up onion and squash on top of the chicken thighs.

 

Pull off a piece of heavy duty aluminum foil that is 16 to 18 inches long.  

 

Place bacon in a criss cross pattern across the foil.

 

Lift the turkey, duck, and the chicken assembly and place it on top of the bacon on the foil. Starting from one side of the foil you will roll the assembly into a giant Tootsie roll of sorts making sure that you do not roll the foil into the meat.

 

Once you have it rolled up, twist the ends of the foil to seal the roll up and get it ready to freeze at this time or ready to go on the grill.

 

Place the roll onto the upper rack of a grill on low heat. Let it sit there cooking for one hour.

 

At one hour, cut the foil off around the bottom of the roll being sure to leave at least an inch of foil around the bottom of the roll that will serve as a boat to keep holding all the juices from spilling into the grill.

 

Sprinkle the top and sides with Symphony of Seasonings Grilling Rub and let it keep cooking for another 30 to 40 minutes.

 

About 10 minutes before removing it from the grill, baste a layer of Sweet Life BBQ Sauce on tops and sides to allow it to caramelize until the TurduckenOINK is ready to be removed to a cutting board to rest for 5 minutes.

 

Cut the TurduckenOINK into 1 inch slices at a slight bias and serve with your favorite sides.
