Holly's "THAT'S AMAZING" Sweet Life Meat Loaf
PICS COMING SOON...
All I could say to Holly when she made this was "That's AMAZING...that's AMAZING!"...ergo the name of the recipe.
Prep Time: This one will take about 20 to 30 minutes of prep
Total prep and cooking time to amaze your friends and family (also known as hanging out time and impressing time): You're looking at 1 hour and 45 minutes to 2 hours. But it will be worth it.
Experience Level needed to pull off WOW Factor: This is an easy assembly ...a rookie foodie can handle this one.
How many people can you serve: This will get you about 8 slices ...a few more or less depending on how thick you cut the slices.
Ingredients
1 Large Sweet Onion...or a couple of smalls if you have em'
1 Green bell pepper...(Chuck...I'm not the boss of you so you don't have to use this ingredient)
3 cloves of fresh garlic...or 30 if you like garlic
Couple tablespoons of Olive oil for some sweating of veggies in a pan
1 lb of ground beef
1 lb of Jimmy Dean Regular Sausage...RIP Jimmy Dean!
2 eggs from a friendly chicken
1/2 cup of cream or half and half...(remember...it's AMAZING)
1 Tbs of brown mustard
2 Tbs of Worcestershire Sauce
3 Tbs of Symphony of Seasonings No-Salt Grilling Rub
1 Cup of Sweet Life BBQ Sauce...plus 1/4 cup for glaze
8 crushed up whole wheat crackers
Directions
Pre-heat your oven to 350 degrees
Chop Onion, green pepper (not you Chuck), and Garlic to medium sized pieces, say a dice and saute them in a pan with the Olive Oil.
While the veggies are cooking put the ground beef and sausage together in a bowl
(At this point I will try to hide green peppers somewhere in Chuck's food)
Dump in the Symphony of Seasonings No-Salt Grilling Rub
Dump in the cup of Sweet Life BBQ Sauce
Mix these ingredients together...look over at the stove to be sure it isn't on fire...maybe give the veggies a quick stir.
In a separate bowl, combine the eggs, cream, mustard, and Worcestershire sauce...
Take the sauteed veggies and add them to the meat mixture and mix together
Dump in the egg and other goodies mixture
Dump in the crushed up wheat crackers
Mix it all up, being cautious not to over mix...just keep it loose man!
Form this mixture into a loaf pan and spread about 1/4 cup of Sweet Life BBQ Sauce over the top as a glaze.
If you use the aluminum foil pans, you can cut a few slits about 1/3 of the way down from the top so the meatloaf will drain a bit as it is cooking...just be sure to have something under it to catch the drippings.
Bake in the 350 degree oven for 1 hour and 15 minutes...
OR...Bake on a 350 degree grill for 1 hour and 15 minutes...
OR...put this meatloaf in a smoker and let it smoke for about 2 hours.
Once it has cooked, set it out on the counter and let it rest for about 10 minutes.
Cut it up into 1 inch slices or so and serve it up!
ENJOY!
All will be well in the land!
