Florida Citrus Grilled Chicken

Prep Time: Plan on 60 minutes or more of marinating the chicken in Symphony of Seasonings Grilling Rub

Cooking Time on the Grill: Low indirect heat to start with transfer to medium direct heat about halfway through cooking. Plan on 20 to 30 minutes.

Total prep and cooking time to amaze your friends and family (also known as hanging out time and impressing time): 1 hour and 30 minutes to 2 hours..

Experience Level needed to pull off WOW Factor: Absolutely no experience needed....a pure grilling novice can pull this one off.

How many people can you serve: For this recipe it is up to you...you can grill as much or as little chicken as you wish. This recipe will show 5 chicken thighs.

Chicken Ingredients

Your favorite Chicken cuts...this recipe is shown with thighs.

Fresh Florida Citrus...for this recipe we used Ruby Red Grapefruit...oranges, lemons, limes, or tangerines would all do well on this recipe and give you different flavor profiles.

Directions

Remove the chicken thighs from their package and place them in a bowl that has a tight lid.

Sprinkle a generous amount of Symphony of Seasonings NO-Salt grilling Rub all over the chicken and mix it up with your hands to get the rub distributed over all of the chicken.

Let it marinate in the refrigerator for at least an hour before you place it on the grill.

While the chicken is marinating, cut your Ruby Red Grapefruit in half and get it ready for the grill

Florida Citrus Grilled Chicken

Pre-heat your grill about 5 minutes before you are ready to start grilling the chicken...go with low heat to start.

 

Place your chicken on the grill along with the Ruby Red Grapefruit...

Let the grilling process begin...just leave them alone for 7 or 8 minutes...low heat.

Check the chicken at about 8 minutes and transfer to a more direct medium heat on the grill. Turn your chicken a time or two as you are grilling...no need to do so very frequently....just enough to get the caramelizing going on the next steps...Basting the grilled chicken with the citrus and BBQ Sauce...

 

Use a pair of tongs to squeeze the grilled citrus over the tops of the chicken...baste the chicken this way a few times until you stop getting juice out of the citrus....turn the grilled chicken a time or two to let the sugars in the grapefruit juice get caramelized on the heat of the grill...

After about 8 minutes or so of basting with the citrus and turning your chicken on the grill...it is time to finish them with Sweet Life BBQ Sauce...same gig here...apply Sweet Life BBQ Sauce to one side and let it sit in the heat of the grill for a few minutes...

Turn the chicken over and repeat this step on the other side...again...let the heat of the grill caramelize the BBQ Sauce onto the chicken.

Once you find it browned and crisped to your satisfaction, remove the grilled chicken from the heat and platter it. Let it rest for a few minutes and get ready to serve it.
