Center Cut Pork Chops stuffed with Apples and Sweet Life BBQ Sauce

This is an amazing recipe shared with me by my brother from another mother Sparky up in Cumberland, Maine. Sparky...thanks for sharing!
Prep Time: 20 to 25 minutes will have chops ready for the grill
Cooking Time on the Grill: 30-40 minutes

Servings sizes for the recipe will vary from half a chop to a full chop...plan accordingly and make sure you have some leftovers for your neighbor to have.
Meat Ingredients4 to 6 Center Cut Pork Chops...about 1 to 1 1/2 inches thick
Stuffing Ingredients
1 large or two medium Granny Smith or Macintosh Apples...definitely cooking apples.
Sweet Life BBQ Sauce from Sweet Life Sauce Company
Rub Ingredients
Symphony of Seasonings Grilling Rub…available from Sweet Life Sauce Company. It’s a no salt rub that enhances the flavors of this recipe!
Or…you could use one of the salt laden rubs you can find at your local grocery.
Or...you could throw together whatever spices you would like.
Tools Needed
A sharp pointed knife so you can create the pocket in the chop to place the apples and BBQ Sauce.
Directions
Take your knife and insert the tip into the side of the Pork Chop. Plunge the knife into the Chop so you go about 3/4 of the way to the other side, but do not go all the way through. Then rock the knife back and forth so you cut the inside of the chop and creat a pocket inside the chop. You will insert the apples and BBQ sauce through the entry point of the knife. Do this for all of you chops.
Get a couple of your favorite apples…stay with good cooking apples such as Granny Smith’s or Macs and get them cut up into ½ inch cubes or so.
Stuff as many of these diced up apples as you want into the pocket in your center cut pork chops. Now, take a Ziploc or plastic bag used as a piping bag or find your baster and inject the pocket in the pork chops with Sweet Life BBQ Sauce until it oozes out.
Lightly baste your chops with a coating of your favorite olive oil infused with a spice rub and fire up the grill.
Cook your chops on low heat on your upper racks of the grill for about 30 to 35 minutes, all depending on the thickness of the chops you used. Let em’ slow cook on that rack and enjoy some time with your family and friends.
After time is up turn the heat up on your grill and transfer the chops to the lower rack on your grill…it’s time to slather your chops with generous amounts of Sweet Life BBQ Sauce.
Once you have your chops coated, let the Sweet Life BBQ Sauce caramelize to a perfect sugary, apple-ee, aged dark rum-ee(sometimes we invent new words at Sweet Life Sauce Company!), coating for your apple stuffed center cut pork chops…I’m drooling just writing this.
