Black Bean and Veggie Patties topped with Sweet Life Yogurt Dip
What a great recipe for the Summer. Enjoy these with or without your favorite type of bun.
Prep Time: This one will take about 20 to 30 minutes of prep once you have the beans all cooked up.
Total prep and cooking time to amaze your friends and family (also known as hanging out time and impressing time): You're looking at 1 hour and 45 minutes to 2 hours to get these to a plate...we are not big fans of the canned Black Beans so go the long route with dried.
Experience Level needed to pull off WOW Factor: Easy...boil water, throw some veggies in a bowl, and cook on the stove or grill.
How many people can you serve: This will get you about 8 to 10 patties.
Ingredients
Black Bean Veggie Patties:
1 lb of Black Beans, dried
3 large Sweet Potatoes
1/2 of and Acorn Squash
1 Yellow Squash
1/2 of a red bell pepper
1 large Onion
3 to 4 leaves of Fresh Basil, chopped
1/2 Tsp of Kosher Salt
2 Tbs of Symphony of Seasonings No-Salt
1 egg ...optional
Sweet Life Yogurt Dip:
2 Cups of organic plain yogurt
1 Tbs of Symphony of Seasonings No-Salt Grilling Rub
1 Tbs of Chili Powder
Directions
Soak your black beans overnite and cook them per the instructions on the package. You could do the quick cook method if you wish the same day. Once cooked, mask the black beans up and set them aside.
Preheat your oven or grill to 350 degrees ...we're getting ready to roast some veggies. Place the sweet potatoes and acorn squash in the oven for about 45 minutes until soft when tested with a fork.
Chop up the onion, red pepper, yellow squash, and basil. Put a bit of olive oil in a pan and saute them until soft.
Once the potatoes and squash in the oven are soft, scoop the acorn squash out of its skin, peel the sweet potatoes, and add them to the black beans that have been mashed.
Add the sauteed veggies to the mix
Crack in the egg
Add the Symphony of Seasonings and Salt and mix this all up until you have it well blended.
Form this mixture into patties and place the patties into a pan with some olive oil on medium high heat.
OR You could grill on direct heat of your grill...just be careful when you place these on the grill as they are delicate until they cook a bit.
Cook each patty until you get a golden caramelized crunchy coating on each side.
Make the Sweet Life Yogurt Dip by simply mixing all of the ingredients together.
Plate them off to the side and serve them with a side bowl of the Sweet Life Yogurt Dip.
Don't be afraid to put lots of Screamin' Peaches Hot Sauce on them for some added flavor boosts.
