BBQ Turkey Breast stuffed with Chicken and Sweet Onions wrapped in bacon

Prep Time:  20 minutes to get it all rolled up   Chilling it off: 20 to 30 minutes   Cooking Time on the Grill:  1 hour 45 minutes to 2 hours.

 

Total prep and cooking time to amaze your friends and family (also known as hanging out time and impressing time): 

2 ½ to 3 hours of hanging out time.

 

Experience Level needed to pull off WOW Factor:  Beginner

 

How many people can you serve:  This chunk of grilled goodness will easily serve 6 to 8 people.  It’s an easy to prep recipe that you can stick in the freezer well ahead of your shindig or family get together as well.

 

Meat Ingredients:

1 Turkey Breast…boneless if you can, or de-bone at home…leave the skin on

1 package of your favorite bacon

5 or 6 chicken thighs…boneless if you can or debone at home…take the skin off.

 

Veggie Ingredients:

1 medium sized sweet onion

Spice of Life BBQ Sauce from Sweet Life Sauce Company…HEY…it has veggies in it!

Rub Ingredients:

Symphony of Seasonings Grilling Rub…available at www.sweetlifesaucecompany.com.   It’s a no salt rub that enhances the flavors of this recipe!

Or…you could use one of the salt laden rubs you can find at your local grocery.

Or...you could throw together whatever spices you would like.

 

Tools Needed:

Meat mallet, piece of aluminum foil, and a big Ziploc bag…the bag will keep turkey from flying all over your kitchen when you are prepping it.  Try it without the bag…and let me know how the clean-up went.  The foil is your roll shaper.

Directions:

Get the TUBE Ready!  Here is a pic of the answer….you are going to make one of these… To do so, you will start with your Turkey breast.  Stick it on a solid surface and cover it with the Ziploc bag.  Now… start whacking it with the meat mallet, the flat side of the mallet.  Start towards the center and work to the edges.  Then start around the edges and start working to the center.  Work the turkey breast with the meat mallet to get it to a uniform thickness of about an inch to an inch and a half thick.  It is going to spread out on you as you are pounding it with the hammer.

Preparation of Turkey breastYou can now season the turkey breast with Symphony of Seasonings Grilling Rub.  Get your chicken thighs and lay them in the turkey breast in a line along the center of the turkey from the top to the bottom.  Get your onion, cut it up and lay the onion over the top of the chicken thighs.

 

 

Roll it UP TIME!

 

Pull a sheet of foil off that is about 2 times as long as the turkey breast is wide.  Place the foil flat on the counter and lay your bacon G!Rchonto the foil in a criss cross pattern.  Kinda like this…Preparing  bacon for wrapping the Turkey Breast

Now… transport the turkey, chicken thighs, and onion combo onto the foil…center it up on the foil as best as you can. 

Turn the foil so it is oriented to you in the longest dimension…this is the direction we are going to start the roll.  Very gently, start at the end closest to you and begin to roll the bacon, turkey, chicken, and onion combo over itself…nip and tuck as you go until you have it completely rolled up like a Tootsie Roll.  Take the ends and spin them up to seal the roll up and tighten it up.  Place the roll in the fridge or freezer for 20 to 30 minutes to firm it up.

GRILL TIME!  WHOOHOOOOOO!!!!!!

Fire it up!  Low heat is all you will need.  Place your newest creation on the top rack of your grill or into an area of the grill that will get indirect heat.  Close the grill…walk away and hang out with your family!

About 30 to 40 minutes in…just take a peek to be sure you aren’t cooking too quickly…we want low and slow on this.  Close it up…walk away…more hanging out time awaits you!

At the hour mark it is time to take the foil off of this wonderful grilled goodness…simply peel off the foil but leave a little boat of foil around the bottom of the roll to hold as much of the juices as you can.

Add some Symphony of Seasonings Grilling Rub to the tops and sides of your masterpiece…whistle while you do it….whistling adds another dimension of flavor.  Go back and hang out with your friends and family…you have about another 45 minutes to an hour…and did I say keep it on low heat.  Keep it on low heat still.

About 10 minutes before you are ready to pull it off the grill, brush a coating of Spice of Life BBQ Sauce from Sweet Life Sauce Company all over this grilled amazing masterpiece of flavors and textures.

When you get to an internal temperature of 170 degrees you will be ready to pull it off the grill and set it on the counter to rest for a minute or two before you slice it up.

Cut it up in 1 inch to 1 ½ inch slices, plate them up and be ready to WOW your friends and family!
