BBQ Potato and Mushroom Soup
Prep Time: Hmmm....like 15 minutes...peeling potatoes is about as complicated as it gets.
Cooking Time on the Stove: Takes about 45 minutes of heating on the stove in a large sauce pan.
Total prep and cooking time to amaze your friends and family (also known as hanging out time and impressing time): WOW...maybe like a whopping 60 minutes...65 if you stretch it.
Experience Level needed to pull off WOW Factor: Absolutely no experience needed....if you can peel a potato...measure some stuff in a measuring cup...you can pull this one off.
How many people can you serve: Plan on about 10 for this recipe we do...and don't be afraid to freeze or stick in the fridge for some very tasty re-visits to this incredible recipe for days after you make it.
Soup Ingredients
Potatoes...you'll need 8 or so...Yukons, Russet, Red...don't matter
Fresh Mushrooms...one of those pint size looking packs you get in the fresh produce section...slice em' up
Onions...1 large onion...you could go two medium if your up for it...
Celery...2 to 3 Stalks
Fresh Garlic Cloves...4 pretty big individual cloves...you could add more if you are a garlic freak.
Lemon...the juice of one fresh lemon
Chicken Stock...3-14 oz cans...42 ozs total...bout 5 cups
Water...cool and refreshing...throw in 4 cups...you can add more if you want...your call
Symphony of Seasonings Grilling Rub from Sweet Life Sauce Company...which you can get right here on our site...1 to 2 tablespoons...or to your taste
Sweet Life BBQ Sauce...1/2 cup...if you want some spice you could use Spice of Life BBQ Sauce...
Heavy Whipping Cream...OH YEAH!...1/2 cup...not much but still OH YEAH!
Kosher Salt...pinch to 1/2 Tsp...not much as you'll get a good bit from the Stock
Brown Sugar...1 Tbs...use it when you are sautéing the veggies
Butter...sweet cream butter...3 to 4 Tbs
Directions
Chop up the onion, garlic, and the celery and throw it in the sauce pot on medium-high heat that has the butter melting in it.
Let the celery and onions cook unitil they just start to get a litte soft and throw in the fresh mushrooms that you have sliced up.
Let this concoction cook and saute' for a few minutes and then toss in the brown sugar. Stir this in until it is completely incorporated into the butter and veggies and is filling your home with a wonderful aroma that has you family hovering around the kitchen like vultures.
It'll look like this...and it tastes good just like this but you have some more stuff to throw in.
Like Chicken Stock...toss all of it in the pot...and yes it is this easy. Put the water in at this time as well.
Now take yer cut up potatoes and throw them in the pot...throw in the Symphony of Seasonings NO-SALT Grilling Rub as well...let it cook...keep it on medium-high heat.
Heavy Cream...nuff said...toss it in the pot...1/2 cup.
Squeeze your lemon from the juice of one...pour it in the pot...let your soup cook a bit more on the stove and the potatoes soften.
Hit your sauce pot with an immersion blender or a really well done steel wisk...burr the soup up but don't liquefy everything...part of the joy of this recipe is the texture and big chunks of potatoes and mushrooms. Keep it cooking on the stove top....toss in the salt.
Drop 1/2 cup of Sweet Life BBQ Sauce in the pot...hit it with the blender for a few seconds...let it cook a bit and you are ready to SERVE IT UP!
A great recipe when the temps drop and you are looking to heat up your insides...
I'll let you know, it's pretty awesome with a dollop of Sour Cream and a few shots of BooDreaux's Cajun Rocket Fuel...yeah...it pretty amazing!
